Carrot croquettes are a delicious main course and very easy to make; tasty and, best of all, quick. They're simple to prepare and cook in the oven, using ingredients usually found in our larders, and everyone loves them.

Begin by peeling the carrots, cut into slices and cook in boiling water for twenty minutes or until tender. Meanwhile, peel and finely chop the onion. When the carrots are cooked, drain, allow to cook and pass through a food mill.

Place the purée in a large bowl and add the breadcrumbs, onion, grated cheese, egg and a pinch of salt. Mix well to obtain an even mixture. Lightly grease a baking tray. Make small balls of the mixture, squash slightly and place on the tray. Drizzle with a little olive oil and bake at 180°C for about 20 minutes, turning the grill on for the final minutes.

Remove from the oven and allow to cool. At this time of year you can serve your carrot croquettes cold, accompanied by fresh seasonal vegetables.
