Cornflake and raisin biscuits

Cornflake and raisin biscuits: simple, tasty and great at any time of day.
INGREDIENTS

200g
150g
Cornflakes
160g
Sugar
100g
Egg

Baking Powder
1/2 sachet
Raisins
A handful
First, soak the raisins in a bowl of water. Beat the butter at room temperature with the sugar until creamy, then add the eggs and mix well.
In a separate bowl, mix the flour and baking powder. Add the flour to the egg and butter mix, a little at a time.
Then add the softened raisins. The mixture should be fairly compact.
Using two spoons, take a small amount of the mixture and roll it in cornflakes until well coated. Continue until all the mixture is used.
Place the biscuits on an oven tray lined with greased baking paper, allowing plenty of space for them to double in size during cooking.
Bake at 180°C in the centre of the oven for 15 minutes, until golden.
